Havregrot, Nordic Oat Porridge with Cardamom and Berries
Havregrot is the workaday oat porridge of Norwegian and Swedish mornings, and it takes well to a whole-food treatment because the oats do the heavy lifting on their own. Method

- Combine the oats, oat milk, 1 cup (240 ml) water, cardamom, cinnamon, and dates in a small pot. Bring to a gentle simmer and cook, stirring often, until thick and creamy, about 8 minutes. The chopped dates dissolve as it cooks and sweeten the whole pot, so no sugar goes in; cardamom is the spice that makes it read Scandinavian rather than plain oatmeal.
- In a second small pan, warm the frozen berries over medium heat with a tablespoon of water until they slump and release their juice, about 4 minutes. Cooking the berries briefly turns them into a loose compote whose own tartness plays against the sweet porridge, no added sugar needed.
- Stir the ground flax into the finished porridge off the heat. Flax thickens the bowl further and adds the omega-3 fats and fiber that oats lack, and it needs no cooking.
- Spoon the porridge into bowls, swirl the warm berries through, and top with the toasted almonds. Serve loose, since it stiffens as it cools; a splash more oat milk brings it back.
