Nordic Barley Porridge with Berries
Grain porridge is the backbone of a Scandinavian breakfast, and while oats are the usual choice, whole barley makes a nuttier, chewier bowl that holds up to being cooked ahead. Hulled barley keeps its bran, so it takes patience, but an overnight soak cuts the time and the reward is a grain with real texture and more fiber than rolled oats. Method
- For a faster morning, soak the barley in plenty of water overnight, then drain. Soaking softens the tough hull-on grain so it cooks in closer to 25 minutes; unsoaked it needs the full time. Hulled barley keeps its bran, unlike pearl barley, which is why it stays chewy and holds more fiber.
- Simmer the barley with 2.5 cups (590 ml) water, the crushed cardamom seeds, and the cinnamon, partly covered, until tender, roughly 40 minutes from dry or 25 from soaked. Cooking the grain first in water keeps the milk from scorching to the pot during the long simmer, and toasting the cardamom's oils into the grain from the start perfumes the whole batch.
- When the barley is soft and most of the water is gone, stir in the oat milk and the chopped dates and cook another 8 to 10 minutes, stirring often, until creamy and loose. The dates dissolve into a mild caramel sweetness through the porridge, and the oat milk starch turns it glossy without cream.
- Meanwhile, warm the berries in a small pan over medium heat until they slump and release their juice, about 5 minutes. Cooking frozen berries down to a loose compote concentrates them into a syrup that needs no sugar, since freezing has already broken the cells so they give up their liquid fast.
- Spoon the porridge into bowls, stir a tablespoon of ground flax into each for body and omega-3s, top with the berry compote, and scatter the walnuts. It keeps four days cold and reheats with a splash of oat milk, which makes it worth cooking the full pot.
