Three-Bean Salad
Three-bean salad is a fixture of the American potluck and picnic, usually two kinds of canned bean and one crisp green bean swimming in a sweet-and-sour vinegar dressing. The classic recipe leans hard on white sugar to balance the vinegar, which is the one thing worth rethinking: blending a few dates into the cider vinegar gives the same sweet, syrupy brine with the fiber still attached. Everything else is honest and cheap, mostly beans from the pantry, a pepper, and half an onion. The green beans get shocked cold to hold their snap, the onion mellows in the acid, and then the whole bowl sits in the fridge and only improves. Make it the night before you need it.
Ingredients
- 12 oz Green beans, trimmed, cut in 1 inch (2.5 cm) pieces
- 1 1/2 cups Kidney beans, cooked or canned, drained
- 1 1/2 cups Chickpeas, cooked or canned, drained
- 1/2 whole Red onions, finely diced
- 1 whole Bell peppers, diced
- 3 wholes Medjool dates, pitted
- 5 tbsp Apple cider vinegar
- 1 tsp Dijon mustard
- 1/3 cup Flat-leaf parsley, chopped
- 1/2 tsp Black peppercorns, freshly ground
Method
- Steam or boil the green beans just until bright and crisp-tender, about 4 minutes, then plunge them into cold water. Shocking them in cold water stops the cooking on a dime and locks in the green and the snap, so they stay crisp against the soft canned beans instead of going drab and limp in the acidic dressing.
- Make the dressing: blend the dates with the vinegar and 2 tablespoons water until completely smooth, then whisk in the mustard and black pepper. Dates blended into the vinegar are the whole trick of this version, giving the sweet-and-sour brine its body and sweetness with fiber attached, exactly where the classic dumps a quarter cup of white sugar.
- Soak the diced red onion in the dressing for 5 minutes before adding anything else. The acid takes the raw harshness off the onion and mellows it into something you can eat by the forkful.
- Drain the green beans well and combine them with the kidney beans, chickpeas, bell pepper, and parsley in a large bowl. Pour over the dressing and toss until everything is coated. Using two soft beans and one crisp green bean is what gives the salad its range of texture; the pepper adds a third crunch.
- Cover and refrigerate at least 2 hours, ideally overnight, tossing once or twice. This salad exists to be made ahead: the beans drink up the sweet-sour dressing as they sit, and it tastes fuller and more balanced on the second day. Toss again and taste for acid before serving.
