Roasted chickpeas are usually crisped in oil, but oil is not what makes them crunch. Water is the enemy, not the missing fat, so the work is in drying the beans thoroughly and roasting them long enough to drive the moisture out. The spices go on at the very end, off the heat, because paprika and cayenne scorch and turn bitter if they roast alongside the beans. A squeeze of lemon does what a pinch of salt would, waking the smoke up without the sodium. Keep them in an open bowl rather than a sealed jar; trapped steam turns the crunch back to chew.

  1. Heat the oven to 425 F (220 C). Spread the drained chickpeas on a clean towel and roll them around to dry them completely. Pick off any loose skins that come away. Dry chickpeas are the whole game here: surface water steams instead of crisps, so the drier they start, the crunchier they finish.
  2. Spread the chickpeas in a single layer on a bare baking sheet, no oil and no crowding. Roast for 30 to 40 minutes, shaking the pan every 10 minutes, until they are deep golden and rattle like dry pebbles when you shake the tray. Bite one: the center should be crisp, not chalky. If it still gives, give it another 5 minutes.
  3. While they roast, toast the cumin seeds in a dry skillet over medium heat until they darken a shade and smell nutty, about a minute, then grind them. Toasting first is the difference between warm cumin and dusty cumin.
  4. Combine the ground cumin, smoked paprika, sweet paprika, and cayenne in a large bowl. The moment the chickpeas come out of the oven, tip them into the bowl and toss hard while they are still blazing hot. Heat opens the spices and makes them cling; the residual steam is the only thing that glues them on, which is why there is no oil.
  5. Squeeze the lemon juice over the top and toss once more. The acid brightens the smoke and stands in for salt. Eat within a few hours while they are at their crispest, or store loosely covered so they can breathe.
