Buffalo Cauliflower Bites
Buffalo wings are bar food built on two things: a vinegary cayenne heat and the cooling dip that answers it. Cauliflower takes to both, its florets roasting up craggy and browned where they catch the sauce. The buffalo sauce here is oil-free, the melted butter of the original replaced by tomato paste for body and a single date to round the burn, with cayenne and cider vinegar doing the loud work. A light almond-flour batter helps the glaze cling without wheat flour. The dip is a quick soy-yogurt ranch, sharp with dill and chive, cool enough to keep the heat in check. - 1 whole Cauliflower, cut into florets
- 1/3 cup Almond flour
- 1/2 cup Unsweetened soy milk
- 3 tbsp Tomato paste
- 1 tsp Cayenne
- 1 tsp Smoked paprika
- 3 tbsp Apple cider vinegar
- 2 cloves Garlic, grated
- 1 whole Medjool dates, pitted
- 1/2 cup Plain plant yogurt, unsweetened soy-based
- 2 tbsp Dill, chopped
- 2 tbsp Chives, snipped
Method
- Whisk the almond flour and soy milk into a thin batter and toss the florets in it to coat lightly. This is what lets the sauce grip later; a whole-food batter of ground almond and soy milk does the clinging job a wheat-flour-and-butter coating usually does. Spread the florets on a parchment-lined tray, not touching, and roast at 450 F (230 C) for 20 minutes until the edges brown.
- Meanwhile, make the buffalo sauce: blend the tomato paste, cayenne, smoked paprika, cider vinegar, garlic, date, and 3 tablespoons water until smooth. Classic buffalo sauce is hot sauce cut with melted butter; here the tomato paste gives the body, the cayenne and vinegar give the signature tang and burn, and one date rounds the sharp edge the butter would have softened.
- Toss the roasted florets in the sauce until fully coated, then return them to the tray and roast another 12 minutes. The second bake sets the sauce onto the cauliflower into a sticky glaze instead of a wet coating.
- While they finish, stir together the plant yogurt, dill, and chives for the dip. Cool, herby, and tangy, it is the ranch that always comes alongside buffalo, rebuilt from soy yogurt with no buttermilk or mayo.
- Eat them hot, straight from the tray, with the dip. The heat is real, so keep the dip close; the coolness is part of the point.
