Mango fluff is a fixture of Sri Lankan parties and hotel dessert trolleys, a pale, airy mousse that in its usual form means canned mango pulp, condensed milk, cream, and a spoon of gelatin to hold it. Blended silken tofu does all of that structural work at once: it whips light, sets soft in the cold, and brings protein, while ripe mango and a few dates supply every bit of the sweetness. Cardamom and lime keep it from turning flat, and toasted cashews give the crunch on top.

  1. Blend the mango, silken tofu, pitted dates, lime juice, and ground cardamom until completely smooth and aerated, stopping to scrape down the sides so no lumps of tofu remain. Blend a full two minutes; the air you beat in is what makes it a fluff rather than a puree.
  2. Taste. The mango and dates should carry all the sweetness, with the lime keeping it from cloying. Silken tofu is nearly flavorless and sets soft as it chills, which is how it replaces both the whipped cream and the sheet of gelatin the original leans on, while adding protein neither of those has.
  3. Spoon into four cups and chill at least 2 hours, until set to a soft mousse. It firms as the cold tofu tightens.
  4. Toast the cashews in a dry pan until golden, chop them, and scatter over the top just before serving so they stay crisp. A little lime zest over the top sharpens the mango further.
